Ingredients (1 Serving)

  • 1 cup Dashi
  • ½ cup green tea
  • 1 teaspoon sake
  • 1 teaspoon mirin
  • 1 teaspoon Nitto Jozo White Tamari
  • 2 teaspoons Suehiro Usukuchi Soy Sauce
  • 1 cup cooked rice
  • 2 oz broiled salmon
  • 1 umeboshi, pit removed and rough chopped
  • 2 teaspoons thinly sliced scallions
  • Jacobson Furikake, to taste

Instructions

  1. In a small saucepot combine the dashi, green tea, sake, mirin, white tamari, and soy sauce. Bring to a simmer.
  2. In a serving bowl large enough for rice and broth, add the steamed rice and pour the hot dashi/tea broth over it.
  3. Place the broiled salmon in the center of the bowl.
  4. Add the chopped umeboshi next to the salmon, and place the sliced scallions on the opposite side.
  5. Sprinkle with furikake and enjoy!
  6. Optional :

    You can customize your ochazuke with other toppings such as shredded nori, different types of fish, tofu, or daikon sprouts. If using raw fish, slice thinly, place on top of rice, and pour the hot tea/dashi mixture over to gently cook it.
