Instructions

Simmering broth

In a small saucepot combine the dashi, green tea, sake, mirin, white tamari, and soy sauce. Bring to a simmer.

Pouring broth

In a serving bowl large enough for rice and broth, add the steamed rice and pour the hot dashi/tea broth over it.

Adding salmon

Place the baked salmon in the center of the bowl.

Adding umeboshi and scallions

Add the topping of your choice. Chopped umeboshi next to the salmon, and place the sliced scallions on the opposite side (optional).

Sprinkling furikake

Sprinkle with Jacobson furikake and enjoy immediately while warm.

Optional: Customize with shredded nori, different fish, tofu, or daikon sprouts. For raw fish, slice thinly and pour hot tea/dashi to gently cook.
